Taking the Big Fat Problem Out of Recipes

Fresh_meatNew study prompts the Fat Information Service (FIS) to introduce 10 ‘recipe rules’ to reduce saturated fat content when following your favourite recipes.

A recent UK study[1] analysed 904 recipes developed by celebrity chefs and discovered over three quarters (87%) contained high levels of undesirable nutrients, particularly saturated fats. Eating too much of this type of fat contributes to heart disease and obesity.

Prompted by the new findings, along with evidence indicating that the UK currently consume 20% more saturated fat than is recommended, FIS experts have developed 10 easy to follow rules that can be applied to any recipe to help make it healthier by reducing the saturated fat content.

The new initiative by FIS aims to encourage the nation to get ‘recipe savvy’ by helping them recognise how to make their favourite home-cooked meals healthier without compromising on taste. For example, simply swapping butter for a vegetable oil based spread or replacing cream with low fat yogurt can significantly reduce the saturated fat content of a recipe.  In addition, FIS are also reminding people of the importance of comparing food labels and selecting products that are lower in saturated fat as another simple way to boost their heart health.

Dr Emma Derbyshire, nutritionist and independent advisor to FIS, comments, “Celebrity chefs are great for inspiring people to cook fresh meals and try different types of foods. The problem is that their recipes are generally far too high in saturated fat and calories to be eaten regularly, making them better suited for treats and special occasions.

“The ‘recipe rules’ developed by the Fat Information Service aim to address this by introducing simple changes that people can make to any type of recipe to make it healthier and allow them to include it as part of their regular diet.

“These simple steps to cut down on the amount of saturated fat, such as adapting recipes by swapping less healthy ingredients with lower sat fat ones, and using healthier cooking methods, could potentially save thousands of lives and years of living with heart disease.”

The Recipe Rules:

1.                  If the recipe includes cream, replace with lower fat fromage frais, natural yoghurt or crème fraiche

2.                  Swap whole milk for semi skimmed or skimmed milk

3.                  If you are using cheese to flavour a dish or a sauce, opt for a strong tasting cheese and use a smaller amount of it. Alternatively, try a reduced fat version

4.                  Swap butter for vegetable oil based spreads or margarine

5.                  Use unsaturated oils such as olive, sunflower or rapeseed oils instead of butter, lard or ghee

6.                  Wherever possible grill meat and poultry instead of frying it and cut off any visible fat or skin before cooking

7.                  Use a non stick pan to avoid adding extra fat when cooking

8.                  Add less meat to stews and casseroles and replace with pulses and extra vegetables instead

9.                  When making a pie opt for just one crust – either a lid or a base – as pastry is high in saturated fat  – (also try to make pastry with

Vegetable oil based spreads or margarine instead of butter)

10.              Grill, bake, poach or steam rather than frying and roasting

Jessica Ennis | People

Jessica Ennis is 9 stone of steely determination and today she has made Britain incredibly proud. The 26-year-old broke the British record in the 100m hurdles and won heptathlon gold for Team GB.

Down-to-earth and wonderfully normal for someone so gifted, Jessica has a fiance, Andy, who works in construction. She has been with Andy for seven years and he is three years older than her. They met in a night out in Sheffield even though they went to the same school.

She’s outspoken “When things don’t go well, I’m always really irrational and thinking, ‘Oh, my world is crumbling around me.'” and honest, saying before a game: “I get really anxious”.

Her ambition is obvious “The silver is a position I just don’t want to be in again. I’ve tasted that and I don’t like it.”

She missed out on the 2008 Olympics because of a stress fracture in her foot. Before the Olympics 2012 Marie Claire magazine asked her how it would feel if she didn’t get it, she said: “I don’t like to think about the negative or the possibility of things going wrong, because that’s just a really bad way of viewing it. It gets in your head.”

Jessica says she visualises every event going well, but not winning as there is “so much to come before that, and so much that can go wrong”.

She trains at the Sheffield’s English Institute of Sport and is the face of Olay Essentials range. She come across as a girl’s girl and says “I don’t even walk the dog without make-up. I’ve always been like that”.

Her beauty icon is Jennifer Aniston and she loves Bobbi Brown make-up. Her beauty routine is low-key, “I train twice a day so I’m always sweating, which is actually quite good for your skin. But I always wash, cleanse and moisturise so my pores won’t clog.”

Some idiot may have called her fat, but the world was outraged and she brushed it off. Jessica has a lot of pressure on those toned shoulders of hers, but she is handling it all with grace and beauty.

Fate on the London Fringe

‘As Fate Would Have It’, produced by LittleBerry Productions, is the debut play of up and coming playwright Phoebe Hunt. It follows the two possible lives of a couple, Damien and Grace, who agree to toss a coin to decide whether they stay together or break up. The story unfolds with episodic scenes following both strands of possibility. In one strand, the couple stay together, continuing the increasingly unhealthy habit of making decisions by the flip of the coin. In the other strand, they break up, setting Grace free, while Damien continues to allow the coin to decide his fate.

As Grace, Phoebe Hunt made the most of the challenging transitions between depression (when with Damien) and glee (when set free from his ever increasing evil clutches). Her bright-eyed smile allowed the audience some breathing room, giving us a break from the relentless tension, and the pathos of her alternate situation. Jamie Hutchins, playing Damien, gave a very specific performance, in both vocal quality and physicality. The way he tossed a coin to make a decision for the very first time, uncertain and tentative, said a lot about his journey when contrasted with his eventual habitual attachment to the ten pence piece. Dinarte Gouveia (Michael) delivered his frequent comic lines from the heart, without force, and Jamila Jennings-Grant (Agatha) gave the audience a voice of reason, with her powerful portrayal of the best friend a girl in a bad relationship could have.

The entire play was accompanied by the composition and live performance of Matt Gaydon on the guitar. Whilst the music added a lot to the moments of heightened emotion, I personally found it occasionally contrasted the feelings expressed by the actors, and needed more variation in melody. Saying that, it served an important purpose when signifying to the audience that we were now changing episode from one strand of reality to its alternate, and back.

The script is cleverly written, though sometimes merging style between naturalism and poeticism, occasionally making believable delivery difficult. Though I admired the unrushed scene changes upstage, the activity downstage could have been more engaging in order to distract us from the movement of furniture. Otherwise, Cat Robey’s direction encouraged high stakes, and a gradual build towards a thoroughly gripping climax.

“As Fate Would Have It’ plays at The Space, Isle of Dogs on the 10th and 11th August, and at The Lion and Unicorn on 14th and 15th August. It is definitely worth a watch, but if you can’t make it, keep an eye out for future productions by LittleBerry Productions.
