Britain is expecting its longest summer since 1910 with scorching temperatures staying around until September, but it seems it’s not just the forecasters expecting high heats. According to new research the British palate is longing for something hotter too.

Recipe for Tangy Chicken and Mango Fajitas

Mexican food is now one of the most popular cuisines in the UK, with fajitas featuring in the top ten. So why not join the fajita craze with taste developer Andrea Lembke, who’s serving up her favourite dish with a twist this summer with her favourite recipe for Tangy Chicken and Mango fajitas in this short video. The recipe is full of flavour, seasoning and spice and is a simple, sweet and scrumptious meal to enjoy with the family this summer.

Recipe for Tangy Chicken and Mango Fajitas

 

What you will need:
– 450g Boneless Chicken
– Extra Virgin Olive Oil for drizzling
– 1 Medium Sized Red Onion
– 1 Green Pepper
– 1 Red Pepper
– 1 Yellow Pepper
– 1/2 Mango
– 1 Santa Maria Perfect Fajita Kit, includes 8 Soft Flour Tortillas, Santa Maria Salsa and Faijita Seasoning Mix
– Santa Maria Chipotle Paste

For the Guacamole to serve with:
– 3 Large Avocados
– 1 Large Lime
– 1 Large Ripe Tomato
– 1 Small Red Onion
– 1 Red & 1 Green Chilli (Optional)
– Handful of fresh Coriander Plant

 

Method
Coat the chicken in the oil and Fajita Seasoning Mix. Heat a heavy based frying pan until very hot and add the seasoned chicken, this should be fried for about 3 minutes or until well browned.

For the guacamole, combine all the ingredients into a bowl and mix well.

Chop the onion, peppers and mango and add into the pan, cook for a further 2 minutes or until the meat is cooked.

Warm Tortillas in a separate pan.

Serve with Salsa, Soured Cream, and Guacamole. Add some Green Jalapeños for an extra kick.

I love mango. I cook with it all the time and I put it in all of my sandwiches – don’t recoil, try it!- I also have the sweetest tooth in West London. So MADD was made for me. You can make your own desserts and the majority of them are all mango. Yum. I took Frost writer Mary Tynan and went to review the goodies. It’s a hard job….

Apart from the mango concept MADD has another niche: you can build your own dessert. It’s fun and fabulous. You can be as creative as you like.

I tried the Siam. Sweet coconut sticky rice with mango. Tastes amazing and very different. Also has a raspberry? sauce. Really good. All of the different consistencies and tastes work together amazingly.

The Mango creme brulee – one word: wow. It tastes amazing. It is cooked perfectly. And does that cracking thing.

Mango upside down cake, god, how did I live for so long without knowing this existed. Absolutely stunning. Tastes like heaven.

I also had the mango passion fruit fool – sweet and delicious.

I also had a mango smoothie, because it was only lunchtime and I had to go back to London Fashion Week after my sweet lunch I didn’t try any of their cocktails or shots. Maybe next time.

The wonderful owners Ralph and Jonathan are friendly, creative and enthusiastic. It is impossible not to like them and want them to do well. They even let me take a coca-cola cupcake. It may sound weird but it is one of the most amazing things I have ever tasted.

If you don’t like mango then MADD do non-mango desserts. They also do tea and coffee.

Stunning Sarah Harding showed off her new catwalk skills with her debut modelling performance at the Look Magazine Show at Westfield Stratford City as part of London Fashion Week.

 

Sarah stole the show, showcasing a selection of outfits by Warehouse and Miss Selfridge whilst the gorgeous Dionne Bromfield gave a stunning performance of ‘Yeah Right’. Both performances were watched by a celebrity crowd including Kelis, Kimberley Wyatt, Laura Whitmore, Nicola Stapleton, Parade and Alesha Dixon.

 

The ‘Sarah Harding’ effect worked with crowds flocking as word got out about Sarah’s appearance with the doors to the centre actually having to be closed at one point for fear of overcrowding.

 

Look, the UK’s biggest-selling weekly fashion magazine, staged its groundbreaking fashion show during London Fashion Week. The show celebrates high street fashion and unites the most popular and iconic brands on Britain’s high street today.
