Queen of Tarts

Serves: 6

 

Ingredients:

For the puff pastry: 

  • 225g (8oz) strong white bread flour
  • 225g (8oz) butter, chilled
  • 1tbsp lemon juice

For the filling:

  • 300g (11oz) light cream cheese
  • Finely grated zest of 1 lemon
  • 2tbsp fresh dill, finely chopped
  • 200g (7oz) pack hot-smoked or smoked salmon, skinned and flaked
  • 4 spring onions, finely sliced

 

Method:

  1. Sift the flour into a bowl with a pinch of salt. Dice 50g (2oz) of the butter. Flatten the rest into a 2.5cm (1in) thick slab.
  2. Rub the diced butter into the flour. Then, using a knife, stir in the lemon juice and about 280ml (9½fl oz) cold water to make soft, elastic dough. Knead on a lightly floured surface until smooth. Cut a cross through half the depth.
  3. Open out the ‘flaps’ and roll out the dough, keeping the centre four times as thick as the flaps.
  4. Put the slab of butter in the centre and fold the flaps over it. Gently roll out to make a rectangle measuring 40.5 x 20.5cm (16 x 8in). Mark off three equal sections from top to bottom. Fold the bottom third of the pastry up over the middle, and the top third down. Wrap in clingfilm and chill for 30min (or freeze for 5-10min).
  5. Repeat the rolling, resting and turning four more times, ensuring the folded edges are to the sides each time.
  6. To make the tarts, preheat oven 200°C (180°C fan) mark 6. Unroll puff pastry and cut or stamp out six individual-sized heart shapes, about 9cm (3½in) diameter. Arrange hearts on baking sheets, spacing a little apart. Score a border 1cm (½in) from the edge of each heart. Use a fork to prick pastry well inside the border.
  7. Bake pastry hearts until golden and risen – about 20-25min. Remove from oven and use the back of a spoon to press down the pastry carefully inside the border to make room for the filling. Cool completely, then tip/scrape out any loose crumbs from the cases (so they won’t get into the filling).
  8. To make filling, mix together cream cheese, most of the lemon zest and dill, and some seasoning (if mixture is too thick, loosen with a little milk). Spoon into cooled tarts, level gently, then top with the flaked salmon and spring onions. Scatter over the remaining lemon zest and dill, and some freshly grated black pepper. Serve.

My husband has stopped eating meat, which means I have had to develop something of an imagination when it comes to cooking. I came up with this dish after being inspired by a lentil and tomato dish I had at an Italian restaurant in Putney called The Italian Boys. This is completely different, but I was greatly inspired by the combination of tomato sauce and lentils. So here is my take on it.

I have called it a hotpot after my husband suggested it. It tastes amazing, if I do say so myself.

Leek And Lentil Hotpot Recipe

You will need:

3-4 Leeks.

A tin of chopped tomatoes.

Lentils (150-200g)

3 carrots

A tablespoon of olive oil

A dollop of butter

La Rosmarina sauce. (We get ours from Fattoria La Villa but you can buy it from somewhere else or make your own. The ingredients are tomatoes, extra virgin oil, fresh rosemary, garlic, salt and hot chilli pepper. Only use a tiny amount of the hot chilli pepper, you want a slight kick, this is not a spicy dish).

Method

Thoroughly clean the lentils and then add them to a pan. Pour cold water over them and then bring to the boil. Cook for 20-30 minutes. Next clean and chop the leeks and the carrots. Then take a frying pan and add a dollop of butter or spread. Add the leeks and the carrots and sauté them for 10 minutes. Add a tablespoon of olive oil. When the leeks and carrots are cooked add the lentils and then the rosemary sauce. Finally, add the tin of tomatoes. Stir it all together and make sure it is all hot. Job done: Leek & Lentil Hotpot. It is quick and easy.

If you can’t get your hands on some La Rosmarina sauce, although I recommend that you do, add some fresh rosemary, a clove of garlic, a touch of salt and a very slight amount of hot chilli pepper to the dish. The hot chilli pepper can be taken out altogether if you do not want any spice, or add a little more if you are so inclined.

Cauliflower and Leek Soup Recipe

This Cauliflower and Leek Soup Recipe is a great vegetarian soup. Lower in calories than the classic potato and leek soup. It is a good alternative and tastes delicious.

You will need:

3 leeks

40g of butter

1  cauliflower

2 tablespoons olive oil

3 cloves garlic, finely chopped

2L stock of your choice. I use vegetable sometimes but not always.

salt and  pepper to taste

How to make it:

Heat the olive oil and butter in a large pan. Use a medium heat. Saute the leeks, the cauliflower and the garlic for roughly 10 minutes. Stir in the stock and then bring to the boil. Reduce the heat, cover and allow the mixture to simmer for 45 minutes.

After 45 minutes remove the soup from the heat. You can then blend with a mixer if you want it to be smooth. I don’t, I like my soup chunky. Add a good dollop of butter or double cream if you want. It is optional but I add more butter. It really adds to the taste. Add salt and pepper to taste too. Done! Simple and delicious.

The quickest way to chill a white wine is in iced water, which only takes 30 minutes versus 2 hours in the fridge.

Always give a bottle of quality red wine, like Nederburg Winemaster’s Reserve Shiraz, time to breathe. If you can’t wait, decant it into a glass jug first to give it chance to mix with the oxygen in the air to release the flavours.

The correct measure to pour for all wines is a third of the glass; this gives the wine room to swirl in the glass, allowing the flavours to develop.

When pairing wine with cheese, think balance – strong wine, strong cheese. The Nederburg Winemaster’s Reserve Cabernet Sauvignon is great with cheeses like Cheddar or Gouda.

 

Jimmy’s tips on how to use wine in cooking

Cooking with wine can add depth and flavour so try these simple recipes for your dinner.

 

Red wine gravy

Ingredients:
6 onions, peeled and chopped
700ml red wine (Winemaster’s Reserve Cabernet
Sauvignon works well)
560ml hot water
2 beef stock cubes
Freshly ground black pepper

Method:
Place the chopped onions and red wine in a large saucepan
Bring to the boil and cook uncovered until reduced by two-thirds, around 20 minutes
Cooking it down in this way reduces the acidity and intensifies the flavour
Add the hot water to the reduced wine, add the stock cubes and stir well until thoroughly dissolved
Simmer, stirring for 3-4 minutes, until the gravy thickens
Season to taste

 

Salad dressing
Ingredients

1 tablespoon balsamic vinegar
Dash of white wine (Winemaster’s Reserve
Sauvignon Blanc)
2 tablespoons extra-virgin olive oil
Method:
In a small bowl or jam jar, whisk the balsamic vinegar with the olive oil and white wine
Season with salt and pepper.

75ml Snow Leopard Vodka
5ml French Dry Vermouth
1 sprig of rosemary to be stirred in a mixing glass

Method: Add ingredients into an ice-filled mixing glass and briskly stir for 20 seconds.
Pour into a Martini glass.
Garnish: Rosemary sprig placed in the Martini or cocktail glass.

Frank’s is the American classic beloved by foodies everywhere for its versatility and zest. Add a fiery twist to a Christmas classic and

put a drop or two on your Boxing Day sausage rolls. Or if you’re ‘Christmased’ out by the 26th, take some leftover turkey and a splash of Frank’s Original to make some mouth-watering fajitas. We have recipe for you below. Yum, sounds delicious.

 

BUFFALO CHICKEN DIP

2 lbs softened cream cheese

2 cups blue cheese dressing

2 cups Frank’s RedHot® Sauce

1 cup crumbled blue cheese

8 cups shredded cooked chicken

2 cups finely diced celery

1 1/2 cups shredded mozzarella or provolone cheese

Julienne vegetables, chips, crackers, etc. as needed

 

1. Whisk together cream cheese, dressing, Frank’s and crumbled blue cheese. Fold in chicken and celery, mix well. Portion 1 cup of mixture into shallow oven or microwave proof ramekins. Top each with 2 tbsp. cheese. Cover and refrigerate until needed.

2. For service reheat dip until golden and bubbly and surround with dips

Popcorn Kitchen refer to their popcorn on their website in caps locks as “THE BEST POPCORN YOU WILL EVER TASTE, HANDMADE USING TRADITIONAL METHODS”. We like confidence here at Frost and we also love popcorn so we thought we might be on to a winner. Turns out we were right. The popcorn is hand-popped in a giant kettle and then they hand-sift it to remove unpopped kernels and then taste every batch to make sure it’s perfect. It works and is tasty, moreish stuff. Perfect for watching endless Christmas TV with.

Kelly’s of Cornwall Banoffee Pie Ice Cream

Kelly’s of Cornwall Banoffee Pie Ice CreamIngredients:

100g butter, melted

200g digestive biscuits

4 bananas

Kelly’s of Cornwall Clotted Cream ice cream or Kelly’s Cornish Dairy Vanilla ice cream

Jaffa Cake mini rolls

Kelly’s of Cornwall Clotted Cream and Honeycomb ice cream

 

 

 

Method:

  1. Line a cake tin with cling film.
  2. Bash the biscuits to make crumbs and mix with the melted butter.
  3. Push the crumb mixture into the cake tin to make a base.
  4. Chop the bananas into slices and use to cover the biscuit base.
  5. Cover the bananas with a layer of Kelly’s of Cornwall Clotted Cream Vanilla ice cream.
  6. Chop the Jaffa Cake rolls into slices and cover the ice cream.
  7. Finish off with a layer of Kelly’s Clotted Cream and Honeycomb ice cream.
  8. Place the tin in the freezer for a couple of hours and then serve.

Summer Drinks Review

We got sent some summer drinks to review from Sainsbury’s: two cordials, Spanish pink grapefruits and guava purée, Ginger & Lime and a sparkling cocktail: Elderflower, Mint & Lime Blended Sparkling Cocktail. Let’s break them down.

Taste The Difference Grapefruit & Pink Guava, made with Spanish pink grapefruits and guava purée.

Absolutely delicious, summery and refreshing. The pink grapefruit mixed with the guava tastes great and really works. This is a perfect summer drink.

Taste The Difference Mexican Lime  & Ginger Cordial.

This is also excellent. It tastes very fresh and the two ingredients really work together. Quite addictive too.

Elderflower, Mint & Lime Blended Sparkling Cocktail.

This yummy cocktail is only 4% volume so you can enjoy it without worrying about hangovers or those awful headaches some people get when they drink in the sun. This cocktail is white wine mixed with elderflower, mint and lime. It is zesty, fresh and refreshing: a perfect summer cocktail. Recommended.

To celebrate the launch of two brand new seasonal Taste the Difference cordials, Sainsbury’s has created three delicious punch recipes for sharing with friends and family while entertaining this summer. The new cordial flavours; Grapefruit & Pink Guava, made with Spanish pink grapefruits and guava purée; and Ginger & Lime, made with Mexican limes, add to the existing range featuring Taste the Difference Elderflower Cordial. These cocktails have been especially designed as long drinks for pitcher measures to be easy to make and refreshing on a hot (or overcast) British Summer’s day.

First up is a citrussy, sparkling, Vodka based cocktail, Sunrise Fizz, which will transport drinkers to the tropics; even if the British Summer is more likely to be torrential than tropical:

To make:
• Pour 180ml of Sainsbury’s Vodka into a jug
• Add 120ml Taste the Difference Spanish Pink Grapefruit & Guava Cordial
• Top up with fizzy water
• Finish with the juice of one grapefruit and garnish with slices of pink grapefruit

If you fancy the taste of an English country garden, then try Sainsbury’s English Garden Cup. This gin and elderflower based drink is the perfect refreshment for a lazy weekend afternoon:

To make:
• Pour 180ml Sainsbury’s Dry London Gin into a pitcher
• Add 120ml Taste the Difference Elderflower Cordial
• Top up with fizzy water
• Finish with the juice of two lemons and garnish with slices of lemon

And finally, Shoot the Breeze, a delicious Rum, ginger and lime punch. Aromatic and spicy, this cocktail will really help to get the party started:

To make:
• Pour 180ml Sainsbury’s Superior White Rum into a jug
• Add 120ml Taste the Difference Mexican Lime & Ginger Cordial
• Top up with ginger ale
• Finish with the juice of two limes and garnish with slices of lime

For an even easier way to enjoy these summer flavours, Sainsbury’s has also launched two new sparkling wine cocktails in the Winemakers’ Selection range; Elderflower, Lime & Mint Fizz Sparkling Cocktail; and Pink Grapefruit Sparkling Cocktail. These are low in alcohol and blended with fruit extracts and Spanish white wine for a refreshing ready-to-drink option.
